Eggs over Spirals

Who doesn’t love eggs for breakfast.  It is a staple in most typical breakfast meals.  This recipe calls for nutrient dense carrots and broccoli stems!  Carrots are rich in antioxidants, carotenes, and vitamin A.  They are a lower carb option than the regular breakfast choice of potatoes or sweet potatoes.  My favorite part of this recipe is the broccoli stems which are very underrated!  They are almost never eaten in leu of their florets being the main attraction.  The broccoli stalks contain more calcium, iron and Vitamin C than the florets! Neat fact of the day for ya.

Eggs over Spirals

Prep Time: 10 minutes

Cook Time: 10 minutes

Total Time: 20 minutes

Ingredients

  • 1 Large Organic Carrot
  • 1 Large Organic Broccoli Stem, about 4 inches
  • 1/2 Organic Sweet Onion
  • 1 Organic Avocado
  • 2-4 Organic Eggs
  • 2 Tablespoons Grassfed Butter, Ghee, Bacon Grease, or Organic Coconut Oil
  • optional: 1/4 cup Sassy Salsa
  • Vegetable Spiralizer

Instructions

  1. Place grassfed butter, ghee, bacon grease, or Organic Coconut Oil in your skillet to grease
  2. Dice up onion and add to skillet, sauté for 5 minutes, periodically stirring
  3. Spiralize carrot and broccoli stem and add to skillet
  4. Cover skillet and let cook for +/- another 5-8 minutes or until desired
  5. Dice up the avocado and set aside
  6. In another skillet prepare your eggs preferably over easy, this way to not overcook and denature the egg yolk. You can also separate the yolks from the whites and set aside to add to the dish at the end too!
  7. Remove veggies from skillet and add to plate, place eggs on top, followed with avocado and lastly Sassy Salsa
