Heart-y Health-y Blueberry Breakfast Scones

Aaaahhhhh it’s blueberry season!! I am a huge advocate to eating high protein and high fat meals.  Eating local, organic, fresh, and real food is a huge key to one’s overall wellness.  If you know me, you know I also have an incredible love for sweets!  The vast majority of the recipes I post will reflect the way I eat for optimal wellness.  Sprinkled in between all the delicious healthy recipes will be a few exceptions for my fellow-sweet-tooth-lovers.  When creating recipes, cooking, or baking in the kitchen I try and use the freshest ingredients and also a minimalist approach.  With that said, cheers to the first sweet treat recipe!

thumb_IMG_1807_1024These “scones” don’t resemble traditional dense sugary scones.  These scones are light, yet FULL of flavor.  What makes them unique is their “freshness”, especially if you use fresh ground wheat berries and just-picked blueberries. Don’t fret…if you do not have cardamom essential oil you can use 1/4 teaspoon of ground cardamom. The cardamom and blueberries pair perfectly!!

This blueberry picking experience was quite phenomenal!  This farm does no advertising, has never sprayed any of their crops, and they mow their fields with push mowers… can we just take a second and realize how awesome that is!  Come and pick as you please.  I spent the morning barefoot, grounded, and soaking in all those wonderful morning rays while picking almost 13 lbs of blueberries!  $1.50/ pound for freshly picked blueberries…get outta town!

TOP THREE REASONS you should eat blueberries:

  1. They have some of the highest amounts of antioxidants and proanthocyanidins compared to any other food.  This positively affects aging by counter acting free radicals and combatting inflammation.  Antioxidants also have cardiovascular benefits of lowering one’s LDL’s, raising one’s HDL’s, and lowering overall blood pressure.
  2. They contain large amounts of resveratrol.  Resveratrol, another polyphenol antioxidant, is unique because it can cross the blood-brain barrier.  Blueberries are great for protecting one’s brain tissue.  Studies have also shown it inhibits the initiation and growth of cancerous tumors. Resveratrol helps promote proper aging, ward off inflammation, and also lower blood pressure too.
  3. They are rich in fiber.  Fiber aides in proper digestion and gut health.

Ingredients

Instructions

  1. If you are using a NutriMill Grain Mill place wheat berries in the top and grind to a semi fine consistency
  2. Preheat oven to 375 F
  3. Combine Dry Ingredients:
  4. Combine flour, baking powder, sea salt, sugar, cinnamon in your KitchenAid and mix thoroughly
  5. Cube butter and fold in slowly to dry ingredients
  6. Wet Ingredients:
  7. Whisk one egg in a small bowl
  8. Add vanilla, doTERRA Cardamom essential oil, heavy cream and mix evenly
  9. Add blueberries to wet ingredients
  10. Slowly add all wet ingredients into KitchenAid
  11. Once dough is mixed use 2-3 Tbsp. of flour to flour surface area
  12. Knead dough into a large circle approximately 1' thick, careful not to over mix dough and blueberries
  13. Use a knife or pizza cutter to slice
  14. Place on cooking sheet
  15. Whisk the second egg, and brush on top of uncooked scones
  16. Bake for 14-16 minutes or until done
  17. Place on cooling rack to cool once done
