Shakshuka Breakfast Skillet

What is Shakshuka?

 

Shakshuka is a popular Middle Eastern breakfast dish!  It’s full of lots of tomatoes and warm spices.  This month, October, tomatoes are in season so it’s the perfect breakfast option to utilize in-season vegetables.

Cumin

 

Did you know cumin is the second most used spice?  This is for good reason.  Cumin and its constituents, Cumin cyminum, are primarily known for aiding in digestion.  It also has antioxidants, anti-inflammatory, and anti-diabetic properties too!  Cumin has antifungal properties as well.

Cumin has an earthy and slightly spicy flavor profile.  It complements many other spices, like chili powder, paprika, and curry very well.  It is used regularly for seasoning gamey (venison, bison, lamb, etc.) meats to help marinade and bring out all the flavors.  You will be hard pressed to find a dish that you couldn’t utilize cumin.

How to use Cumin?

 

My favorite aspect of fresh herbs and spices are the endless ways to combine them.  My second favorite is the different ways I can utilize them, whether they are dried, fresh, or whole herbs and spices.  When cooking it always best to use fresh ingredients.  In this recipe I used organic ground cumin.  An even better way to optimize the volatile components of any spice is to grind them right before you use them.  My favorite method is with a mortar and pestle.  Experiment at home which method creates the best taste profile for you!

 

Shakshuka Breakfast Skillet

Ingredients

  • 1 Tablespoon Bacon Grease or Grassfed Butter
  • 4 oz Grassfed Lamb
  • 3 Organic Roma Tomatoes
  • 1/2 Organic Sweet Onion
  • 2 Organic Garlic Gloves
  • 3 Organic Eggs
  • 1/2 tsp. Organic Cumin
  • 1/4 tsp. Organic Chili Powder
  • 1/4 tsp. Organic Paprika
  • 4-6 Fresh Organic Basil Leaves

Instructions

    Prep Vegetables:
  1. Dice tomatoes and set aside
  2. Finely dice onion and set aside
  3. Mince garlic cloves
  4. Skillet:
  5. Place bacon grease or grassfed butter, lamb, onion, and garlic in skillet and sauté for 5 minutes
  6. Add in tomatoes, cumin and chili powder
  7. Mix in spices thoroughly and simmer for 3 minutes
  8. Create "pockets" for the eggs within the mixture
  9. Crack eggs into those pockets and cover skillet until eggs are cooked to your liking
  10. Sprinkle paprika to finish and top with fresh basil leaves
