Lemon Chicken Rice Soup
This soup is somehow equally light and bright in taste, but incredibly fulfilling and does not leave you unsatisfied. A thicc soup if I do say so myself ๐ I almost exclusively make soups with bone broth in lieu of vegetable broth or stock because of the increased nutritional benefits. Bone broth is naturally rich in protein, collagen, gelatin, and minerals. This adds flavor but more importantly helps support a happy gut. Bone broth can improve and promote healing of your gut lining if its been compromised from gastrointestinal issues, food sensitivities, or inflamed.

Lemon Chicken Rice Soup
Almost too simple to hold so much flavor. Another protein packed, gut healthy, and gut healing recipe that leaves you satisfied.

Method
- Cover rice with filtered water and set aside to soak
- Place one tablespoon of butter or oil in bottom of Dutch oven and place on medium/high heat
- *Remove any giblets first* and place entire chicken in Dutch oven
- Pour one box of chicken bone broth over chicken, cover and let cook for 25-30 minutes
- Once chicken is cooked through, remove from broth, debone/remove all meat from chicken, cut into bite size pieces as you like and place back in broth over medium heat
- Strain and rinse rice, add to Dutch oven
- Add second box of bone broth + 1 cup water
- Cover and let rice cook, stirring occasionally
- Micrograte 4 lemons and then juice lemons, add to soup
- Whisk 4 eggs then slowly stir them in at the end, this will create a very creamy soup texture
- Salt & pepper as you like once served!
