Protein Pancake

One giant pancake with nearly 30g of protein!

Ingredients
  

Protein
  • 1/2 Cup Organic Whole Milk Good Culture Cottage Cheese
  • 2 Organic Vital Farms Eggs
Pantry
  • 1/4 Cup Bob's Red Mill Tapioca Flour or flour of your choice*
  • 1 tsp Bob's Red Bill Baking Soda
  • 1 tsp Vanilla Bean Paste or splash of vanilla extract
  • 2 tbsp Organic Maple Syrup optional
  • 1-2 tbsp Organic Salted Butter

Equipment

  • measuring cup
  • blender
  • cooking pan
  • spatula

Method
 

  1. Place pan on medium heat and melt 1 tbsp of butter in pan
  2. Combine all ingredients in blender
  3. Blend until smooth
  4. Pour mixture into pan
  5. Flip when golden brown
  6. Top with remaining butter & maple syrup!

Notes

Tapioca flour does give this a little bit of a chewy texture!  I enjoy this, it reminds me of lefse, a Norwegian staple found grocery stores back home in Wisconsin year round!  If you do not need a gluten free option, feel free to use any flour of your choice!  This recipe is high protein and celiac friendly.
